Main Ingredients

500 g Flour 17.6 oz
5 g Baking Powder 0.25 oz
20 g Yeast 0.71 oz
1 Tea Spoon Salt
300 ml Lukewarm Water 10 fl oz
Handful Pumpkin Seeds

Recipe

Crumble the yeast, put it into glass of 300 ml/ 10 fl oz lukewarm water and mix it properly until it dissolves. Now mix the flour, baking powder and the salt in bigger bowl. Cut the pumpkin seeds into small pieces and put them into the bowl too.

Add dissolved yeast into the bowl.

Mix everything properly together.

Prepare the proofing basked on the side. Put little bit of flour into the basket and circle/shake it a little to fill the gaps with flour. If needed use small brush or your hand to fill the gaps with flour. It should look like this when done.

Proofing Basket

Put the dough into the basket and give it time for proofing. Cover the basket with cotton cloth or Eco Factory Beeswax Large Wrap which is quite handy for this.

Proofing Basket

Leave the dough in basket until it raises or 1 hour maximum. When the dough is properly proofed it will raise approximately to this level.

Proofing Basket

Meanwhile heat up your oven to 250 degrees Celsius/ 475 Fahrenheit, and when it is hot enough, very important thing – put one big glass of warm water into baking tin and put it into oven on bottom for some minutes until it evaporates a little. The steam is a must during the bread baking process.

Now put a baking sheet into baking tin, tip out the dough in the middle of the tin, and put it into the pre-heated oven.

Bread Loaf

Set the oven clock to 10 minutes and leave it at 250 degrees Celsius/ 475 Fahrenheit. After 10 minutes open the oven quickly, take out the baking tin with water, reduce the temperature to 180-200 degrees Celsius / 375 Fahrenheit and leave it another 20-22 minutes to finish the bread baking process :o)

When the master piece is done, take it out of the oven. When you knock at the bread crust and you hear slight hollow sound, the bread is perfectly done :o)

Enjoy!
